Motivation

It takes a lot of effort, time and sometimes money to motivate myself to exercise, eat clean, go to work, step out of my comfort zone, etc. I just watched an incredible movie on Netflix, entitled “Running the Sahara”. This movie captured the many facets of pushing past one’s limits, braving extreme elements, and enduring pain and overcoming fears. I was brought to tears at many times in the movie as I thought about how I would handle similar situations in my life. This documentary is a must see!

My day has been pretty peaceful. I got up this morning in a baking mood. I whipped up a new recipe from one of my current favorite cookbooks.

Hello Weekend!

It’s been a couple of days since I last made a post. Just so busy at work. Well, the weekend is here and I’m ready to blog the weekend. I’ve had some great food for breakfast and lunch this past week.

I can’t wait to get started on my new homework assignment. I’ll be studying the Eat Clean Diet info on vegetarian lifestyle. This is going to be great!

Great Run Tonight!

I feel myself building stamina and endurance as I train for my next 5K race. I had a conversation with a friend of mine on beginning a walking/running program. She told me that she visited her nutritionist and found out that interval training was the best for losing body fat quickly. Tonight’s run involved intervals of walking and running. I walked at a speed of 3.4 for 1 minute and I ran at a speed of 4.5 for 1 minute. My next run will be even longer. I’m ready for the challenge.
A coworker and I were talking about adding cycling to our fitness routine. I think that may be my next purchase. I will have to research the best bike to buy of course. I guess I’ll ride the bike in my neighborhood because I don’t want to attach a bike rack to my car. Well, this post will be short and sweet. Goodnight all!

A Peaceful Sunday

I’ve had a really good day today. I’ve had a lot of time to speak to a lot of good friends on the phone and catch up on the latest news. I plan to take a run this evening in my gym downstairs.

I will knockout another 2 miles to prepare me for my 5K in the summer. I need to download the Gymboss Interval App on my iPhone

I usually watch tv and listen to my iTunes as I run. I also like to read Runner’s magazine. The latest issue has a Guide for Beginning Runners which was pretty good.

Trip to Northeast Los Angeles for Dinner

I decided to get out of the house today and take a drive to Highland Park (East LA) to try out some vegan tacos.  The family owned business, Plant Food For People (PFFP), has created an awesome  Vegan “carnita” taco made from jack fruit. Each taco can be ordered with 2 toppings.  I chose tomatillo salsa and nela cole slaw on one and Chipotle mayo and pico de gallo on the other.  Superb!  The texture and taste of the jack fruit is identical to meat.  I’m definitely going back.  They also made homemade pinto beans!  The price is excellent $2.00 per taco.  What a deal!Image

Something smells delicious!

Im up this morning looking at recipes in the “Fork Over Knives” book.  I watched the movie on Netflix this morn and I’m convinced that the vegetarian lifestyle is a right move for me.  I selected the Cinnamon and Raisin Rolled Oats Recipe.  I adapted it a little because I’m so used to the way Mom made oatmeal when I was a lil girl.

Cinnamon, Raisin and Apple Rolled Oats

l l/2 cups of water

1/2 cup rolled oats

1 organic apple peeled, cored and diced

1/4 cup golden raisins

dash of salt

dash of cinnamon

Boil all ingredients in a pot and stir occasionally for about 10 mins.

Pour into a bowl and top with 1/2 tbs of Vegan butter,  1 tbs Splenda Brown Sugar
